The symptoms of salmonella in humans include vomiting, diarrhea, poor appetite, dehydration, sluggishness, weakness and high fever. Symptoms of listeria include fever, muscle aches, and sometimes gastrointestinal symptoms such as nausea or diarrhea. If infection spreads to the nervous system, symptoms such as headache, stiff neck, confusion, loss of balance, or convulsions can occur. Listeria are the bacteria responsible for listeriosis, a rare but lethal food borne infection that has a mortality rate of 25%. The mortality rate for salmonella is less than 1%.
